Winemaking: The free run must, the juice naturally released from the grapes before pressing. We use local indigenous yeast, referred to as "endogen," and initiate a cold pre-fermentative maceration at around 24°C for approximately 24 hours to enhance aromas and structure extraction. Fermentation occurs in stainless steel vats at 14°C, followed by maceration with lees.
Ageing: 70% of the wine ages in oak barrels for 4 months, 25% in ceramic amphoras, and 5% in demijohns before bottling
