A bold, golden yellow wine with intense aromatic depth. The nose opens with quince, orellana, honey, and thyme, while softer notes of vanilla, toasted almonds, and caramel emerge as the glass rests. On the palate, it is fresh and vibrant with a sweet, dense entry and well balanced acidity. The finish is long, with bright, lingering aromas. Perfect with both stewed and raw oily fish, white meats like poultry or rabbit, and a great match for all types of cured cheeses.

Endogen White

    Region: Baix Penedes (Catalunya, Spain)

    Soil: Clay-loam Soil. 

    Winemaking: Free run must extracted naturally before pressing, ensuring a pure juice. Use of local indigenous yeast ("endogen") for authentic fermentation. Cold pre-fermentative maceration at 5ºC for 24 hours, extracting aromas and enhancing structure. Fermentation in stainless steel vat at 14ºC, maintaining a controlled environment. Extended macerations with lees to enhance flavor complexity.

    Aging: Aged for 4 months in oak barrels, providing a nuanced character. Diverse aging approach: 70% in oak, 25% in ceramic amphoras, 5% in demijohn. 

    Other: Service temperature 5-7ºC. 

    Alcohol (ABV): 12%
