A sparkling wine that reimagines Prosecco, crafted using the traditional Champagne method for an elegant, refined finish. Hand-harvested from the peaceful vineyards of Premaor and Refrontolo in the UNESCO-listed hills of Valdobbiadene, this wine is a beautiful balance of heritage and innovation.
Chiappe Chiare rests on the lees for three months and undergoes a final in-bottle fermentation using the rigoverno method, where sun-dried grape must reawakens fermentation as spring arrives. Unfiltered and undisgorged, it delivers natural effervescence and expressive character. Expect bright notes of white flowers, green apple, pear, and wisteria, complemented by the comforting aroma of fresh bread crust from extended yeast contact. Enjoy it clear or gently stir in the lees for a deeper, textured experience.

Fermentation: First spontaneous fermention using indigenous yeast in steel tanks. The wine rests on the lees for three months. We bottle in the spring following the harvestadding our naturally sun-dried grape must to start a second fermentation in the bottle. Grape Must is added using the 'Rigoverno' method. Fermentation is finished in spring.
