WINEMAKER Celler Nessu – A small, independent cellar in Alt Penedès working with indigenous varieties and low-intervention methods, focusing on expressive, site-driven wines made with care and restraint. STYLE Ancestral pét-nat (sparkling white) GRAPES Xarel·lo (from 40-year-old vines) REGION Alt Penedès, Spain VINTAGE 2023 ALCOHOL 12% ABV TASTING NOTES White peach and grapefruit lead, followed by ginger spice and a subtle white-pepper lift. Bright and textured, with freshness balanced by depth from lees ageing. WINEMAKING Hand-harvested grapes undergo a gentle seven-day skin maceration at low temperatures before spontaneous fermentation. Made using the ancestral method, fermented in seasoned French oak and aged for six months on fine lees. Manually disgorged for a clean, refined finish. SULPHITES Only naturally occurring sulphites (approximately 15 mg/L). BEST WITH Appetisers, fusion cuisine, and dishes that lean a little unexpected. MOMENTS Celebration without ceremony. Easy joy. STYLE Sparkling rosé (rigoverno method) GRAPES Pinot Bianco, Verdiso, Merlot REGION Treviso, Veneto, Italy From the UNESCO-listed hills of Valdobbiadene, at the foothills of the Dolomites VINTAGE 2023 ALCOHOL 11.5% ABV TASTING NOTES Pink grapefruit, raspberry, and redcurrant lead, lifted by aromatic herbs and a gentle note of fresh bread crust from extended yeast contact. Dry, layered, and expressive, with energy and depth in equal measure. WINEMAKING Hand-harvested grapes from Premaor and Refrontolo are naturally fermented with ambient yeast sui lieviti. Merlot undergoes brief skin contact to extract colour before the base wines are blended. A second fermentation is triggered using the rigoverno method, where naturally sun-dried grape must is added in bottle, building texture and complexity over time. Unfiltered, giving the wine its naturally cloudy appearance. SULPHITES Unfiltered and made with minimal intervention. BEST WITH Aperitivo moments, vegetable-forward dishes, seafood, or light plates that favour freshness and balance. MOMENTS Confident ease. Long afternoons. Feeling good exactly as you are.
