This ancestral method wine begins with a 72 hour fermentative maceration at controlled temperature in stainless steel tanks. As aromas, color, and structure develop, the must is bottled at the ideal density to create a fine, crisp bubble. It rests for six months as fermentation completes in bottle, followed by aging on its own lees. After aging, it is disgorged and topped up with the same wine, no sugar, no additives, just pure expression. Unfiltered, unmasked, and entirely natural, this wine captures the raw beauty of its land and native varieties. It is a true reflection of place, bottled with honesty and character.

Winemaking & Ageing: Fermentative maceration for 72 hours at a controlled temperature in a stainless-steel tank while we make a maceration to extract aromas, structure, and color. We bottle the must at an optimum density to achieve an elegant and at the same time crunchy bottle, and let it rest for 6 months so that the fermentation in the bottle ends correctly and then makes a small aging with the mothers themselves inside the bottle. Once the aging is over, we disgorge and refill with the same wine. No sugar or any other additives are added.
Other: A natural sparkle with nothing that the mask puts in a bottle everything that comes out of a land and unique varieties that have no better place to express themselves than where they are.
